Buttermilk Kuzhambu or Mor Kuzhambu(Tamil) is a commonly prepared dish in Tamil Nadu. This is a liquid curry recipe which is served with white or boiled rice, pancake made of lentils / mixed gram dosa. Traditionally, it includes vegetables like okra, winter melon or ash gourd, colocasia, etc. The taste is a bit sour, and it is a dish of Tamil Nadu.

Cook mung dhal with water in a pressure cooker. - To make buttermilk, whisk curd in a cup of water, - Over medium heat, in a saucepan with oil, fry fennel, fenugreek green chiles, coriander seeds, urad and channa. Turn of the heat. Soak the contents in a bowl.-15 minutes. Blend with ginger and coconut in a wet grinder to make a smooth paste.
  4. Over medium heat in a saucepantemper mustard seeds and asafetida in hot oil. Stir fry pumpkin pieces in until it gets soft. Add 2 cups of water. Bring it to boil. Stir in cooked moong. Simmer the heat. Stir in buttermilk and coconut paste. Stir in turmeric powder, Turn of the heat after a couple of minutes. Salt to taste. Add curry leaves. Morkuzhambu is ready to serve, Taste, Serve with rice, papad and vegetable

Grind it along with green chillies and coconut to a smooth paste and keep aside. Cook ashgourd (white pumpkin) in a little water with salt until tender. I dip paper towel in sesame seed oil to grease the skillet (I use pre seasoned cast iron skillet). Instructions In medium saucepan heat buttermilk, chicken flavor and cornstarch mix with whisk and heat until it comes to a boil over medium heat. The sauce will thicken as it cools.
