Sweet Pongal is also known as sakkarai ponga L In Tamil language and is a sweet dish made during festive occasions in South India.

The ingredients needed to make Sweet Pongal:
  1. Prepare 3/4 cup rice
  2. Prepare 1/4 cup split moong
  3. Make ready 1 cup Palm sugar (Panang Kalkandu in Tamil) or brown sugar
  4. Prepare 1 cup Milk
  5. Make ready 1 cup Coconut milk (I use the caned coconut milk)
  6. Take 1/2 cup ghee
  7. Prepare Few saffron threads
  8. Get 1/2 tsp cardamom
  9. Make ready 1/2 tsp Liquor root (Adhi mathuram in Tamil) freshly grated
  10. Make ready 1/2 tsp Nutmeg, freshly grated
  11. Make ready 1/4 cup cashews
  12. Make ready 1/4 cup pistachio (shelled)
  13. Make ready 1/4 cup golden raisins
  14. Take 1 tsp rose water or vanilla extract

Sweet Pongal is a traditional dish made for festivals like Sankranthi and Navratri and is also served as neivedhyam for many other festivals. As a variant of this Sweet Pongal, sometimes the rice and dal are cooked in a mixture of milk and water. This gives the sweet dish a milky taste and luscious mouth-feel. Sweet Pongal is compulsorily made for the Pongal festival.

Steps to make Sweet Pongal:
  1. Roast rice and moong in a tsp ghee. Cook rice, moong, 4c water, 1c milk together in a bowl placed in a pressure cooker. In a saucepan boil 1c milk over medium heat- about 4-5 minutes, add sugar. After sugar dissolves-about 2-3 minutes, add the cooked rice plus moong, mix well, add ghee and simmer heat, cook for a couple more minutes, add coconut milk, stir in saffron, cardamom, nutmeg and adhi mathuram. Remove from the stove. Garnish with roasted cashews, pistachio and raisin. “Pongalo Pongal”
